Chocolate Brownie Cake

Chocolate brownie cake. The perfect treat after a long week at work, curl up on the sofa with a slice. Its incredibly easy to make, you just throw everything in a bowl and mix it up. The cake is moist and chocolatey.  Its perfect served warm with cream or ice cream. You’ll definitely be going back for a second slice.


200g caster sugar

110g butter

30g cocoa powder

½ teaspoon vanilla extract

2 eggs

110g gluten free plain flour

½ teaspoon baking powder

¼ teaspoon salt


  1. Preheat oven to 180°C.
  2. Melt the butter in the microwave, or in a bowl over a pan of water.
  3. Place all ingredients in a bowl and beat to combine.
  4. Pour mixture into a lined 8 inch cake tin.
  5. Bake for 20-25 minutes.
  6. Eat warm straight away with fruit and cream, eat cold like a slice of cake or reheat and enjoy later on!
