These gluten free biscuits are really simple and quick to make, they are light and crunchy and fly off the plate.
6oz Plain gluten free flour
- Cream the butter and sugar together.
- Add the flour and form into a dough.
- Roll the dough out until 1/2cm thick, and cut out using cutters. It helps to use lots of flour to avoid the dough from sticking to the work surface.
- Bake for around 10 minutes until golden brown.
For the icing, whisk an egg white and add a tablespoon of icing sugar at a time until thick. Add drops of food colouring and swirl through with a cocktail stick to create a marble affect. Dip the biscuits to coat with icing.
