Welcome to my blog: Gluten Stee, my gluten free cookery blog. I was diagnosed coeliac 13 years ago at age 10. I grew up doing a lot of cooking and baking with my family. I thought I would start with something fairly simple, a tray of gluten free cupcakes, who doesn’t love a piece of cake. These cupcakes are light and fluffy, really easy to make. There perfect for someone new to a gluten free diet, who fancies a treat.
- 4oz Butter
- 4oz Sugar
- 2 Eggs
- 4oz Gluten Free Flour
- 2 teaspoons of baking powder
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon milk
- Beat together butter and sugar.
- Mix in eggs.
- Add flour and baking powder.
- Add vanilla extract and milk.
- Bake at 180 degrees, for around 15-20 minutes.
- Allow to cool and decorate.
For the buttercream icing, I mixed 4oz butter, with 4oz icing sugar and a tablespoon of milk.
The cupcakes usually lasts around 3 days, then starts to go dry. If your not going to eat it within this time, freeze then, then remove from the freezer and decorate when you want it.
This mix can also be used to make a cake, you just need to cook it for longer, until a skewer comes out clean-around 30 minutes.
